So this is simply a celebration of tacos. Because you have to have something lovely to inspire all that creative work. We generally eat really healthy meals. We eat meat maybe 1x per week and a lot, a LOT of vegetables. We don't add salt to meals, we cook everything from scratch and did I mention we eat a lot of vegetables? None of that is boring to us, we're always experimenting with flavors and textures and trying new things. We enjoy cooking. It's another creative outlet for us.
Our tacos are usually black bean tacos and I tend to load them up with lots of spice. But this last week, we tried something new and it was delicious! It might not have been especially healthy but it was quick, satisfying, and sometimes you need to splurge. So here's how easy this recipe is.
Dice a couple of yukon potatoes into half inch cubes. Fry them in vegetable oil for 10 mins or so or until just cooked. We used about a teaspoon in a nonstick pan, just for color. In a separate pan, cook 8 oz. of chorizo until lightly browned. Drain off any grease and combine the two and stir to combine.
Serve potato/chorizo mixture with corn tortillas, diced tomatoes, salsa verde, cilantro, and avocados. You could add any other veggies you wanted to. No cheese necessary.
Now THAT is a delicious taco.
